  3. Tapar la cazuela y cocer esta salsa para que se concentre, durante 25 minutos a fuego medio, probar de sal. Pasar esta salsa por el chino y poner de nuevo a la cazuela junto con la carne y la picada...
  4. Calentar el horno a 180ºC. Cocer el fricandó al horno, con la cazuela tapada, hasta que la carne esté bien tierna... Freír las setas y añadir a la cazuela.
  5. Hervir el arroz con agua, sal y un chorro de aceite. Escurrir y lavar. Poner el arroz en moldes y reservar. Servir el fricandó con su salsa, con las setas y el flan de arroz...
