Primero calentar el horno a 180º. separar las yemas y batir con la raspadura de limon hasta que doblen su volumen, montar las claras y añadirle el azúcar poco apoco, y unir a la yemas con movimientos envolventes. unir,harina, cacao y levadura y tamizar añadirla a las yemas y claras poco a poco,uniéndola con movimientos envolventes,verter en el molde engrasado y enharinado, poner en el horno a 180º durante unos 30 a 35 minutos, cuando este dejar enfriar en una rejilla
  2. Hacer la trufa, calentando la nata con el azúcar y cuando hierva añadir el chocolate partido en trozos,cuando este deshecho añadir la mantequilla y mezclar bien, ponerla en el frigo con papel film para que enfrié durante 2 horas y montar
  3. Crema de queso Triplicar las yemas + azúcar. El queso en punto pomada. Montar las claras en punto de nieve. Mezclar los tres preparados.Añadir la parte opcional reservar en frío.
  4. Almíbar café:Hervir agua + azúcar. Incorporar el alcohol elegido. Añadir el café. Dejar 10’ mi fusionando
  5. Cubierta:poner la gelatina en agua fría, calentar la leche cuando hierva añadir el chocolate y después la gelatina escurrida
  6. Montaje: cortar el bizcocho entres partes, y bañar con el almíbar con manga pastelera cubrir la primera parte de trufa y un poco de crema de queso, poner la siguiente parte del bizcocho bañar, y rellenar con crema de queso, terminar con la ultima parte del bizcocho y poner en el frió durante 1 hora o algo más, sacarla del frigorífico y bañar con la cubierta de chocolate,decorar al gusto y al frigorífico o congelador, que aproveche
  7. La gelatina siempre hay que ponerla en agua fría para que hidrate
