- Crema de relleno mascarpone
- 500 gramos mascarpone o philadelphia
- 120 Gr azúcar blanca
- 200 ml nata para montar 35% M.G
- 3 Huevos L
- 1 Pizca sal (para montar las clsras)
- Sirope de café
- 250 ml café
- 60 ml amaretto (Ron o Brandy)
- Resto de ingredientes
- 400 Gr soletillas
- Cacao en polvo
- 1 tableta chocolate
- Acompañar/Decorar
- Bolas helado al gusto
- Nata
- Cacao en polvo

- En dos cuencos. Separamos las claras de las yemas.
- Bol claras. Añadir la pizca de sal y 1/4 de azúcar. Batimos a velocidad alta, 7 minutos. (Batir hasta dejarlas montadas)
- Bol Nata. IMPORTANTE: que la nata, el bol y las varillas estén frías antes de batirla. Batir velocidad alta, 2 minutos. Añadimos otro 1/4 de azúcar y volvemos a batir 2 minutos, velocidad alta. (Batir hasta que este firme) y reservar en la nevera.
- Bol yemas. Añadir el otro 1/4 de azúcar y batir velocidad alta, 6 minutos. Batir hasta que este blanquecinas y cremosas. Reservar temperatura ambiente.
- Bol Mascarpone. Batir 5 segundos. Añadir poco a poco la mezcla de las yemas y batir hasta que queden bien incorporadas.
- Ahora añadimos el bol de las claras y las envolvemos poco a poco con movimientos envolventes (espátula).
- Ahora añadimos la mezcla del bol de la nata montada, con movimientos envolventes. Cuando todo este homogeneo, reservar en la nevera.
- Bol café. Añadir 2 cucharaditas de azúcar para endulzarlo y el amaretto. IMPORTANTE: Dejar enfriar!!
- Cuando el café este frío, elegir el molde del postre.
- Empezamos a montar. Mojamos las soletillas en el café rápido y colocamos una base completa en el molde.
- Encima de las soletillas colocamos una capa de la crema mascarpone.
- Por encima de la crema mascarpone, espolvorearemos cacao en polvo y rallaremos la tableta de chocolate.
- Realizar de nuevo otra capa soletilla + crema + cacao y chocolate.
- Dejarlo reposar 8h en el frigorífico.
- Podeís acompañarlo con helado de vainilla y nata como yo hice. Y para presentarlo y darle un toque bonito, ralla un poco de chocolate sobre el plato.
