    Colocar las yemas el azúcar y agua en un bol a baño María y batir hasta llegar a los 85 °C, una vez alcanzada la temperatura retirar y seguir batiendo con batidora hasta lograr una espuma suave y llegar a temperatura ambiente.
  2. Batir la crema de leche a medio punto y mezclar con el queso mascarpone, una vez integrado agregar la espuma de yemas y la gelatina sin sabor hidratada.
  3. Armado : Armar el aro cubriendo sus laterales con tiras de acetato y colocar en el fondo vainillas remojadas en el almíbar de café. (no embeberlas demasiado) cubrirlas con una parte de la crema y armar otro piso de vainillas y terminar con crema de tiramisú. Se puede rodear el aro con medias vainillas colocadas antes del primer piso.
  4. Una vez terminado de armar llevar al frío por lo menos 3 o 4 hs. Al desmoldarlo sacar el acetato y espolvorear con abundante cacao amargo.
