  1. Batir las claras con la mitad del azúcar refinada hasta llegar al punto turrón
  2. Batir las yemas con la mitad del azúcar refinada hasta blanquear, debe verse con burbujas en la superficie y color ivory. Colocar en forma de lluvia en las yemas alternando con las claras.
  3. Colocar la mezcla en una manga con duya lisa y colocar tiras sobre el papel estrella. Cernir azúcar glass sobre las soletas.
    Hornear por 10 minutos a 180°C o hasta que estén ligeramente dorados.
  4. Hervir el agua con el azúcar aproximadamente 10 minutos hasta tener un jarabe simple. Sacar del fuego, enfriar un poco e incorporar en forma de pastita el café soluble al gusto.
  5. Hacer un páte a bombe con las yemas y el azúcar, incorporar de poco en poco para evitar separar la mezcla. Agregar el vino marsala moviendo bien para homogeneizar la preparación.
  6. Hidratar la grenetina, reposar, derretir a baño maría e incorporar en forma de hilo a la mezcla anterior. Ponerle un poco del jarabe de café.
  7. Tomar como base las soletas y remojar con suficiente jarabe. Poner crema mascarpone y alizar con una espátula. Continuar con las soletas hasta terminar. Refrigerar y na vez que este gelificadala crema mascarpone. Al momento de prenentar y retirar el aro.
  8. Espolvorear cocoa.
