  2. 800 ml caldo de verduras
  3. 1 cebolla
  4. 2 dientes ajo
  5. 1 pimiento italiano
  6. 1 calabacín

  9. 2 cucharaditas pimentón dulce
  10. 1 cucharadita cúrcuma
  11. 2 cucharadas tomate frito
  12. 1 cucharada aceite de oliva

  1. Empezamos la receta preparando todos los ingredientes. Cortamos y picamos finos la cebolla, el pimiento italiano y el ajo y reservamos. Por otra parte pelamos y cortamos en rodajas la zanahoria y en cubos el calabacín.
  2. En una sartén amplia ponemos a calentar una cucharada de aceite de oliva. Una vez este caliente añadimos la cebolla y el pimiento italiano y dejamos que se pochen un par de minutos y que cojan color a fuego medio. Luego añadimos el ajo picado y damos un par de vueltas.
  3. Lo siguiente que añadiremos son la zanahoria y el calabacín, salpimentamos al gusto y subimos el fuego dejamos unos minutos y añadimos los champiñones.
  4. Una vez tengamos todas las verduras en la sartén añadimos el pimentón y la cúrcuma, damos un par de vueltas y añadimos las dos cucharadas de tomate frito para que no se nos queme el pimentón. Dos minutos después añadimos el caldo de verduras y corregimos de sal.
  5. Una vez empiece a hervir añadimos la pasta y removemos bien para que se quede mezclado uniformemente, bajamos el fuego y tapamos. Dejamos 9 o 10 minutos a fuego suave sin remover. Una vez pasado el tiempo para conseguir un buen socarrat subimos el fuego y dejamos un par de minutos más sin remover para que los fideos que están en contacto con la sartén se tuesten un poco. 2 o 3 minutos después apagamos el fuego y dejamos reposar 10 o 15 minutos tapado.
