La fideuá es un plato típico de la Comunidad Valenciana, es parecido a la paella de marisco pero en lugar de arroz se elabora con fideos gordos, en algunas comarcas se elabora también con fideo fino tipo cabello de ángel. - Preparamos todos los ingredientes, se parte el pimiento en tiras, se limpia y trocea la sepia, se ralla el tomate, pesamos los fideos y quitamos los bigotes de las gambas con ayuda de unas tijeras.
- Ponemos el aceite en una cazuela o paella, yo utilicé una cazuela de barro, cuando esté caliente (no hay que dejar que tire humo) echamos el pimiento y los dientes de ajo con la piel. Cuando estén doraditos los apartamos.
- A continuación añadimos la sepia y la sofreimos, cuando esté lista añadimos las gambas, damos una vueltas y agregamos el tomate rallado,
- En un minuto estará listo para añadir la ñora picada y los fideos. En seguida le adicionamos el caldo para que la ñora no se queme, removemos e incorporamos el pimiento y los ajos que apartamos al principio.
- Llevamos a ebullición, adicionamos la sal y un poquito de colorante. Lo provamos y rectificamos si fuera necesario.
- Lo dejamos hervir a fuego fuerte durante los minutos que nos indica el envase de los fideos (suelen ser entre 5 y 10 minutos).
- Ya tenemos una estupenda fideguá. Se puede dejar seca o con un poquito de caldo, eso es al gusto del consumidor. Buen provecho!!
