  2. 700 ml caldo de pescado (fumet)
  3. 1/2 cebolla, 2 ajos

  1. Primero, como siempre, preparamos los ingredientes...
  2. Picamos fino la cebolla y los ajos, yo corto los calamares, limpiar los mejillones, rallar los tomates y disponer cerca el resto de ingredientes
  3. Empezamos con un chorrito de aceite de oliva en el fondo de una olla y echamos los calamares y perejil, sal y pimienta al gusto, cocinamos un par de minutos moviendo para que no se peguen. Echamos después la cebolla y el ajo y cocinamos a fuego medio.
  4. Cuando estén casi hechos ponemos la pasta de fideuá que hayamos elegido (yo, coditos) y la "tostamos" un poquito (1min sin dejar de mover) y añadimos el tomate. Cocinamos 2minutos moviendo a cada poco y después echamos el caldo y subimos el fuego.
  5. Echamos los mejillones, un poquitín de sal y el laurel y ponemos a hervir. Cuando esté hirviendo bajamos el fuego al medio y dejamos cocer unos 12-15 minutos (dependiendo de como os guste la pasta, yo la hago muy blandita),moviendo de vez en cuando para que no se pegue.
  6. Cuando probamos y nos gusta cómo está la pasta echamos el salmón, el colorante o azafrán (según lo que más os guste o tengáis en casa) y la cúrcuma al gusto.
  7. Movemos para integrarlo todo y lo dejamos 5 minutos en la vitrocerámica con el fuego apagado y con el calor residual para que repose.
  8. Servir y disfrutar 😋
