  1. Corta en dados pequeños el tofu y fríelo en aceite caliente junto con las especias hasta que se doren. Reserva.
  2. Pica la cebolla y el puerro y en el mismo aceite sofríe hasta que se transparente.
  3. Añade el calabacín y una pizca de sal y pimienta y sigue cocinando hasta que se ablande. Añade la zanahoria rallada en la parte de gruesa del rallador y sigue cocinando unos minutos a fuego medio alto.
  4. Añade la fideuá y remueve. Añade el cubito de caldo de verduras y el agua. Tapa y deja cocinar unos 10 minutos. En los últimos minutos añade el tofu y termina de cocinar.
  5. Retira del fuego, remueve y deja reposar unos 5-10 minutos antes de servir.
  6. Corta unos gajos de limón y listo para disfrutar. Buen provecho!
