- Ponemos un litro de agua en una cacerola, sal, una cebolla entera y pelada y una hoja de laurel, cuando empiece a hervir echamos las gambas y apenas hierva de nuevo las sacamos y reservamos. En la misma agua cocemos el potón y los mejillones. Cuando esté cocido, sacamos los mejillones de sus conchas, los reservamos, también colamos el agua y se reserva.
- En una paellera, ponemos un poco de aceite, el pimiento picadito, la otra cebolla picada y el ajo también picadito. Cuando se haya rehogado un poco, añadimos el tomate pelado y muy picado, pimienta, sal y dejamos que se haga el refrito a fuego medio.
- Cuando el refrito se vea hecho, incorporamos los fideos, los tostamos un poco y agregamos unos 600 ml del caldo que teníamos reservado, el azafrán y el laurel. Si durante la cocción necesita más líquido, echaremos caldo o agua caliente y si vemos que le falta color ponemos un poco de colorante.
- Cuando los fideos estén casi listos, agregamos algunas gambas peladas y cortadas, el pescado cocido y la pintarroja cruda y a trocitos, se hará rápido, colocamos el resto de gambas encima y dejamos cocer un poco, se retira del fuego dejándolo reposar unos minutos con la paellera tapada.
